Sheet Pan Nachos

One of my favorite things about the Super Bowl is seeing all the fun food everyone makes for the big game.  Nachos are an easy fix and these sheet pan nachos are great for feeding a crowd (if you want to share).  Just cook up one of our Grassy Flat Ranch roasts using this recipe Beef Tacos (smoked brisket would be yummy on this too!)

Cook your roast all day in the crockpot then when it is time for the big game grab a cookie sheet and add a good layer of tortilla chips and sprinkle your favorite cheeses on top, then add your shredded beef.  Broil in the oven for about five minutes or until the cheese is nice and melty.  Remove from the oven and cover those nachos with your favorite toppings!  Super easy and super delicious!  Below I've given a list of all my favorite toppings to use.  Have fun, get creative and enjoy!

  • Smoked Gouda Cheese
  • Pepper Jack Cheese
  • Sharp Cheddar Cheese
  • Cilantro
  • Tomatoes
  • Olives
  • Jalapeño Peppers
  • Avocado
  • Red Onion
  • Feta Cheese
  • Cilantro Lime Dressing

The final touch is a creamy cilantro lime dressing drizzled overtop, this recipe from Our Best Bites is my favorite:

Ingredients:

  • 1 - once package ranch dressing mix
  • 1 cup Mayonnaise
  • 1/2 cup buttermilk
  • 1-2 limes
  • 2 cloves garlic
  • 1/4 cup green salsa
  • 1/2 cup chopped cilantro
  • hot sauce to taste

Instructions:

  • Mix buttermilk, mayonnaise, 2 tablespoons of lime juice, and ranch mix in a blender. Add the garlic and green salsa and blend together, add the cilantro and mix until combined. Add hot sauce to taste. Put in the fridge for a couple hours if possible before serving.
