Italian Beef Sandwich

As the weather starts to shift and the days get shorter I start to crave those hearty, crockpot comfort foods.  Last week I made some Italian Beef Sandwiches with our Grassy Flat Ranch Chuck Roast, it was such an easy filling meal I knew I had to share the recipe with you.  There really is nothing better than a hearty, comforting meal made from scratch.  Chuck Roast is perfect for creating these tender, flavorful Italian beef sandwiches that everyone will love. Here’s the simple, delicious recipe you can make at home: 

Ingredients:     

  • 3–4 lb Grassy Flat Ranch Chuck Roast       
  • 2 cups beef broth    
  • 1 packet dry Italian dressing mix  
  • 2 tsp Italian seasoning  
  • 1 (16-oz) jar of pepperoncini (with juice)  
  • Hoagie rolls  
  • Butter  
  • Sliced provolone or mozzarella cheese  

Instructions:    

  1. Prepare the roast: Brown all sides of your Chuck roast in stock pot with 3 Tablespoons butter and season with salt and pepper.
  2. Place your chuck roast in a slow cooker or large Dutch oven. Pour in the beef broth, sprinkle the Italian dressing mix and Italian seasoning over the top, and add the jar of pepperoncini and 1/2 cup of its juice.   
  3. Cook low and slow: Cover and cook on low for 7–8 hours (or until the roast is tender and shreds easily).   
  4. Shred the beef: Remove the roast and shred it using two forks. Return the shredded beef to the cooking juices to soak up all that flavor.   
  5. Toast the rolls: Butter the hoagie rolls and toast them until golden brown. 
  6. Assemble the sandwiches: Pile the shredded beef onto the toasted rolls, top with provolone or mozzarella, and serve hot.  These Italian beef sandwiches are packed with savory flavor, a hint of tang from the pepperoncini, and melt-in-your-mouth tenderness that only a chuck roast can deliver.
